From tray to paper

A hand rolls out the dough with a steel roller inside a black tray.
A brush spreads tomato sauce over the dough in the tray.
A hand scatters shredded mozzarella over the tomato base.
A tray of pizza comes out of the oven, held with a grey oven mitt.
Two hands cut the freshly baked pizza into rectangles, still in the tray.

  1. Rested, then rolled

    The dough rests up to 48 hours, then we roll it out right in the tray.

  2. Tomato by brush

    We brush the dough with tomato and extra virgin olive oil.

  3. First bake, then mozzarella

    A first bake with the tomato, then the fiordilatte mozzarella goes on top.

  4. Second bake

    Back in the oven with the mozzarella, until the base turns crisp.

  5. Cut in the tray

    Out of the oven, we cut it into portions right in the tray.

  6. Folded and wrapped

    Each portion folds over its filling and goes into the paper, ready to go.
